We love dessert and we love it even more when it’s quick to make.
Thankfully an Insta baker has come up with a recipe that takes no more than five minutes to create.
Self-taught chef Eloise Head, who runs Instagram account Fit Waffe Kitchen, is back with another delightful creation – red velvet mug cake.
The London baker shared the quick recipe with her thousands of followers who can’t get enough of her tasty treats.
All you need for this delectable dessert are a few supermarket essentials that you probably already have lying around the kitchen.
To make the red velvet mug cake you’ll need milk, flour, sugar, baking powder, cocoa powder, vegetable oil, and a bit of red food colouring of course.
For the icing you’ll need cream cheese and icing sugar.
You can get the icing ready as you wait for the cake to bake in the microwave.
Ingredients
- 3 tbsp milk
- 1/2 tsp lemon juice
- 4 tbsp flour
- 2 tbsp sugar
- 1/4 tsp baking powder
- 3/4 tsp cocoa powder
- 1 1/2 tsp vegetable oil
- Dash of food colouring
- 40g cream cheese
- 15g icing sugar
Method
- To get started, pour in three tablespoons of milk into a mug and add in half a teaspoon of lemon juice, whisking it together.
- Then add four tablespoons of flour, two tablespoons of sugar, a quarter teaspoon of baking powder, three-quarters of a teaspoon of cocoa powder, one and a half tablespoons of vegetable oil, and a small dash of food colouring
- Mix it all together until it’s a smooth batter. You can also add white chocolate chips if you like.
- Fold the mixture in then microwave it for approximately 70 seconds.
- While this happens, turn your focus on the icing. All you’ll need is 40g of cream cheese and 15g of icing sugar.
- Mix it all together and voila – your icing is ready. Add a generous dollop of your icing mixture on top of the cake in the mug and icing sugar is also optional.
