How to make a Swiss roll with just four ingredients in under half an hour

Looking for an easy dessert to bake for a weekend treat?

This Swiss roll takes just 15 minutes to put together, another 10 minutes to bake and then a few minutes to roll it all up.

Of course, the Swiss roll is a classic and it’s easier than it looks, if you’ve never tried it before.

The key is getting the right size of tin and following the instructions so you can get the roll right.

To keep it simple, we’ve just used jam, but you can add buttercream, fresh cream, fruit or anything you fancy.

Ingredients

  • 125g caster sugar
  • 125g plain flour
  • 3 large eggs
  • 1/2 jar of jam of your choice

Method

  1. Preheat your oven to 220C. Grease and line a 33cm x 23cm Swiss roll tin. If you don’t have a Swiss roll tin, you can use a baking tray, as long at it has edges to contain the mix and is roughly the same dimensions, so the roll is right. It might not be as neat but it will still work. Dust the greaseproof paper with some flour and caster sugar.
  2. Put the sugar and eggs in a bowl and whisk until pale, light and fluffy. This will take about 10 minutes if you are using an electric whisk and about 20 minutes by hand. The mixture should be thick and leave a trail when you lift it out of the bowl.
  3. Sift the flour into the sugar and egg mixture, a little at a time, folding it in carefully so you don’t knock the air out of the mixture.
  4. Once the flour has been folded in, pour the mixture into your tin and spread it into the corners. Bake for 10 minutes, until golden brown and firm to the touch.
  5. Once it is cooked, lay a piece of greaseproof paper that is bigger than the tin out on a surface and dust it with caster sugar. Tip the cooked sponge onto the paper and peel off the paper it was cooked in.
  6. Now for the roll – spread the sponge with the jam (and any other toppings you want), not quite taking it all the way to the edge. On the shorter side, lightly run a knife about 1cm of the edge, taking care to mark but not cut through the sponge. Fold this bit over on itself and use it to help you roll it up, using the paper underneath to help you.
  7. Once you have rolled it up, leave it to cool with the seam side down. You can trim any edges to neaten it up and show off the roll.
