Toffee apples are a Halloween and Bonfire Night tradition and earlier this week, we brought you a simple way to make them.
But if you want something with a twist (which also stops you wrecking your teeth) this recipe from Hobbycraft brings together the taste of a toffee apple with a cupcake.
They even include lolly sticks in the top in a nod to the classic treat (though feel free to leave those out if you don’t have any).
It’s a basic sponge with spices, chunks of apple and a delicious sauce poured over the top.
There’s just seven steps too so it’s ideal to make with kids this half-term.
Ingredients
- 100g butter
- 70g caster sugar
- 2 free-range eggs
- 300g of plain flour
- 1 1/2 half tsp cinnamon
- 1/2 tsp mixed spice
- 2 tsp baking powder
- 2 to 3 eating apples (such as Granny Smith)
- 220ml of milk
- Caramel sauce – this recipe used a ready-made tin version but you could make you own.
Method
- Preheat the oven to 190 degrees Celsius.
- Cream together the butter and sugar until the mixture is light and fluffy.
- Add in the beaten egg, flour, baking powder and cinnamon and mix until evenly incorporated, making sure that there are no lumps!
- Chop the apples and add into the mixture, gently folding to incorporate into the mixture.
- Line a cupcake tin with paper cases, filling each three-quarters full.
- Place in the preheated oven and bake for 30 minutes or until the tops are golden brown.
- Leave to cool on a wire rack until cold. Apply the caramel sauce using a palette knife. To finish insert the lollipop stick into the centre of the cupcake.
