Looking for something simple to bake this weeked?
These cookies need seven ingredients and can be made in just four easy steps.
They don’t contain any flour but instead use oats to create a delicious texture.
You don’t need to heat them in the oven – instead you melt together a liquid of butter, sugar, milk, cocoa powder and peanut butter and when you add the oats, they absorb eveything.
As it cools, it sets in the cookie shape and you can enjoy.
Smooth peanut butter is best but you can use crunchy if that’s all you have.
If you want to make these vegan, you can switch out the butter for coconut oil and use your favourite non-dairy milk instead.
Ingredients
- 60g butter
- 300g sugar
- 120ml milk
- 20g cocoa powder
- 160g peanut butter
- 2 tsp vanilla extract
- 240g oats
- Pinch of salt
Method
- Put the butter, sugar, milk and cocoa powder in a saucepan and melt together until it comes to a simmer. Simmer gently for about one minute then remove from the heat then add the peanut butter and vanilla extract and stir together.
- Add the oats and the salt. Leave to stand for five minutes so the oats can absorb the moisture.
- Place one tablespoon of the mixture on a lined baking tray for each cookie. Flatten down each one.
- Leave to set in the fridge for about 45 minutes, then remove from the tray and enjoy.
