With everyone baking at home, but with limited ingredients, easy recipes are what we all need.
Today we bring you the Fifteen. These are sold widely in Northern Ireland and are absolutely delicious.
They get their name because you need 15 digestives, 15 marshmallows and 15 glace cherries. You also need a tin of condensed milk and some coconut.
You don’t need an oven to make these as you simply stir them up and put them in the fridge.
We’re been making these in my family for a long time and my mum created a batch to show how it’s done, with a few adaptations.
She only had mini-marshmallows and we’re not a fan of glace cherries so she left those out but if you want to stick to tradition, add them into your mix.
If you don’t want to, you can add extra mallows, some chocolate chips, nuts or anything else you fancy.
They might not be the prettiest but honestly they’re delicious. Without the heat, they’re easy for kids to make too.
Ingredients
15 digestives
15 marshmallows (or around 200g mini marshmallows)
15 glace cherries
200ml condensed milk (about half a can)
100g desiccated coconut
Method
Put the digestive biscuits in a bag and bash with a rolling pin until they’re all broken up.
Cut the marshmallows into four (or just add mini mallows whole) and chop cherries in half. Add the biscuits, marshmallows and cherries to the bowl. Stir in the condensed milk to create a sticky dough. If it’s too dry, all more condensed milk.
Lay out a sheet of greaseproof paper, clingfilm or foil and sprinkle with the coconut. Create a sausage shape with your sticky mixture, roll in the coconut and wrap in the paper.
Put the whole thing in the fridge for four to six hours until set. Remove from the fridge and chop into 15 slices (or we just cut a little as we want it).
The sweet treats will keep for about a week.
