With new lockdown restrictions in place, it’s likely we can expect the nation to turn to comfort baking again – like we did earlier this year.
So, it’s well worth stocking up on sourdough and banana bread recipes for the months ahead.
Australian bakers have shared a brilliant recipe for banana bread, which involves throwing three ingredients (banana, self-raising flour and condensed milk) into a slow cooker.
The method involves creating a ‘bain marie’ (the French term for ‘water bath’) in the slow cooker.
After the cake mixture is poured into a cake tin lined with parchment, it should then be placed into a slow cooker which is filled with three centimetres of water at the base.
This technique helps to lock in moisture and to ensure the bread bakes evenly throughout – a tea towel slipped under the lid also helps absorb condensation.
The slow cooker is then left on a ‘high’ heat for two hours to work its magic.
It seems the unconventional recipe has been delighting home bakers who also suggest throwing nuts and chocolate chips into the mix, to give it added texture. They also recommend serving it with golden syrup or melted butter.
It looks like the banana bread recipe has been doing the rounds online for a while, but people are still raving about it months on.

5 ripe bananas
300g self-raising flour
1 tin condensed milk
Method
1. Beat all ingredients into a smooth batter.
2. Then pour into a cake tin lined with baking parchment.
3. After, fill the base of a slow cooker with 3cm of water and place the tin inside.
4. Finally, slip a tea towel under the lid and cook on ‘high’ for two hours.
