Sometimes the simple things are the best.
While you can pick up a packet of Jammie Dodgers in the supermarket and they are are tasty, it’s fun to make your own version – named Jammy Dodgers – at home too.
These biscuits need just six store cupboard ingredients and are really straightforward.
You can be creative with the shape in the middle to make them a little more fun. Just create something to make the jam shine through.
Best served with a hot cup of tea.
Ingredients
- 225g unsalted butter
- 125g icing sugar
- ½ tsp vanilla extract
- 2 egg yolks
- 300g plain flour
- 150g jam (we used raspberry but you can try another kind if you like)
Method
- Beat the butter and sugar together until pale, add the vanilla, egg yolks and flour and whisk until a soft dough is formed. Wrap in clingfilm and leave in the fridge for one hour until firm.
- Preheat the oven to 180C/160C fan/gas mark 4. Sprinkle some flour on a clean surface and roll out the dough until around 1/2cm thick.
- Using a cutter around 7.5cm (if you don’t have a cutter, use a glass), stamp out 12 biscuits. Then take a smaller cutter (we used a small heart shape) and cut out the middle of each one. Place on a lined baking sheet.
- Take all the scraps of the dough and knead together before rolling out again and cutting out 12 more biscuits to act as the bottom. Place them on another lined baking sheet.
- Bake the biscuits for 10-12 minutes, then remove from the oven and cool.
- Once cool, spread jam on the bottom biscuits and sandwich the top (with the hole cut in it) on top.
