Finding flour in the shops is like finding a needle in a haystack at the moment, and, with the nation turning to baking to get through lockdown, many are finding these shortages problematic.
Thankfully, there’s a whole host of substitutes which can be used for baking cakes, biscuits, breads and all kinds of treats.
For those looking for the perfect rise on their cakes, there’s a simple way to make your own self-raising flour at home and it requires just two ingredients – plain flour and baking powder.
Some of the biggest names in the culinary world swear by this method, too.
It seems food writer and cooking show host Nigella Lawson doesn’t buy self-raising flour and instead uses this nifty trick to make her own at home.
Over on Nigella’s website, a fan once asked her how she makes her own self-raising flour at home.
To which one of Nigella’s employees replied: ‘Nigella tends not to use self-raising flour in her more recent books as she doesn’t bother to keep both plain (all-purpose) and self-raising flour.
‘Partly as keeping just one type of flour saves on storage space and partly as if you don’t use self-raising flour regularly then it will lose its raising power over time.’
The website states there’s just one simple rule to remember – add 2 tsp of baking powder for every 150g of plain flour.
It continues: ‘Sift the flour and baking powder together into a bowl before using, to make sure the baking powder is thoroughly distributed (or you can put both ingredients into a bowl and whisk them together).
‘If you are baking with cocoa, yogurt or buttermilk then add 1/4 teaspoon bicarbonate of soda (baking soda) as well as the baking powder as generally these ingredients need a little extra leavening boost.’
But the website stresses that it’s important not to use baking powder past its ‘use by’ or ‘best before’ date – as this may affect the rise.
