Woman shares simple recipe for incredible giant Jaffa Cake

While we’re all in lockdown, loads of us are getting more domestic than we ever have before.

So if you’ve already had a go at sourdough and banana bread, why not try something a little more inventive – and a lot more fun.

A woman has shared a recipe for an impressive giant Jaffa Cake – and it is surprisingly easy. You might even have everything you need already in your cupboards.

Sharing the simple recipe on Facebook group Rate My Plate, Vanessa Cassidy uploaded step-by-step pics, so people could see what each stage of the process would look like.

The final result looks absolutely delicious, and unmistakeably resembles a Jaffa Cake for giants.

It’s the perfect thing to keep your kids, housemates or partner happy when the lockdown blues kick in.

To make the base, all you need is butter, sugar, flour, baking powder and eggs, while you need orange jelly and dark chocolate for the next layer and the outer coating.

After making the cake base, Vanessa made the jelly and poured it into a round bowl, so it would set in the right shape.

When the jelly was firm, she placed it on top of the base and covered the whole thing with chocolate. She then used a fork to create the classic Jaffa Cake pattern on top.

‘Use a basic 100g butter block, sugar, flour, two eggs, one teaspoon of baking powder with one packet of orange jelly and one packet of dark chocolate,’ she wrote. ‘And… Ta-da! A giant Jaffa cake!’

Plenty commented under the post that they would be giving the cake a try.

But one person had a suggestion of how to make the jelly more like the real thing.

‘Next time, make the jelly with orange marmalade, gelatine and water – it gives a more realistic taste,’ they wrote.

So, if you can get your hands on some gelatine, give it a go.
