We’re in a global crisis due to the spread of coronavirus, and some people are making matters worse by panic buying and stockpiling essential items.
But, the good news is this could be an opportunity to be a little more inventive in the kitchen. If you swear by baked beans, we have a super simple alternative you can whip up in minutes if you’re local supermarket is out of stock.
Baked beans are the ultimate comfort food. Stick them on toast, pour them over a hot potato, smother them with grated cheese – they can make even the bleakest of days feel better.
And they’re incredibly easy to make.
Raid your cupboards, if you do have some kind of tinned beans in the house – almost any will work – then you should be able to create a batch of your own. You might even find that you prefer them to the big brands.
We asked Bristol-based food blogger Charlie Vivante to share her ridiculously simple baked beans recipe, so you can keep your entire household happy throughout lockdown.
Simple homemade baked beans
Ingredients
Tin of beans x2, drained – kidney beans, butter beans, cannellini beans (most beans will work)
Chopped onion or a few pickled onions
Brown sugar/black treacle 1 tbsp
Tin of tomotoes OR a small carton of passata OR tomato paste 2 tbsp
Plenty of seasoning
Method
Cook the onion on a low heat until translucent and sticky.
Add the sugar and tomatoes and bring the heat up to a simmer.
Add the beans and pop in the oven with the lid on for 40 minutes on a heat of around 180 degrees.
Take the lid off for 10-15 minutes to thicken.
Serve on toast, or however you like them.
Add these to your beans if you have them in
Pork belly
Ham hock
Pork loin
Sausages
Garlic (2-4 cloves chopped or crushed)
Paprika 1 tbsp
If you’re really low on store cupboard items, you can make a basic batch with just the four ingredients that Charlie has stated – but have a look at what else you’ve got in and figure out what you like.
Chilies, thyme, garlic, Worcester sauce – this is your chance to put your own stamp on the humble bean.
